I have exciting news! My husband and I bought our first home in Felton CA a few months ago (about 10 minutes from Santa Cruz). We just finished the renovations and moved in this week. We had already committed to this move before the fires last week but I have to say after the fires I’m really glad we moved. I will send a picture next week. (I can’t find my camera adaptor in all the boxes.)

I went to visit a friend this week and we spent time in her garden. Have you ever noticed people who plant gardens and plant zucchini have SO much of it! They just give it away. So what’s a women to do with all that zucchini? I mean how many stir fries can one make.

Here is a family recipe that my mom makes ALL the time.
ZUCCHINI BREAD or MUFFINS.
I adapted it to a healthier version. But don’t worry the kids, partners and friends won’t know the difference and as usual there is a vegan version.

ZUCCHINI BREAD OR MUFFINS

what you need

3 eggs or ¾ - 1-cup silken tofu to make it vegan
1-cup oil
1 ½ cup sucanant or 1-cup maple syrup or agave nectar
½ cup chopped nuts (walnuts or pecans)
2 cups grated zucchini (you can also use carrots if you don’t like zucchini)
3 tsp vanilla
2 cups flour*
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
¼ tsp baking powder

what to do

Combine dry ingredients
Combine wet ingredients
Mix together
Bake in loaf pan at 350 degrees for 1 hour
Or muffin pans for 20-30 minutes

Watch the timing, each pan and oven differs

  • I use whole wheat flour but if you cant do the real wheat thing try spelt flour. Some people with wheat allergies can tolerate spelt flour.
  • I never tried brown rice flour with this recipe before but give it a whirl.

  darshana's pick of the week

AGAVE

What is it? It’s a natural sweetener made from blue agave. It is the sweet nectar of the cactus-like plant. Most people are familiar with it because it is also used in the production of tequila.

The thick liquid that actually looks like honey comes in light and dark forms, the latter being unfiltered. I find the texture very similar to honey as well so its great for teas and syrups.

And what’s so great about this "healthier" syrup? It has a very low Glycemic Index (GI) value. They even recommend it to diabetics. Although it can taste sweeter than sugar, it doesn't cause the same highs and lows that other sweeteners do. For example: table sugar has a GI value of 68, on a scale from 1 to 100, honey comes in at 55 and agave syrup has a value of around 15.

That is super significant for the sugar challenged!

Agave syrup can be used in baked goods. You can even use it in the recipe above. In most recipes that have not been converted you will need to reduce the amount of liquid in the recipe to account for its presence.

As I mentioned I use it in my tea and lately my favorite is in plain yogurt with berries.
