As part of our one-one programs and group programs at Fruition Women’s Health, we share time together on our yahoo group discussing everything from recipes and new ideas for health, to struggles and, especially, what’s going well.

This week has been a discussion of what to eat for breakfast and lunch. Since I have been nursing my cold I have less of an appetite this week. Yet I still want to feed myself the best healthy food I can. As a result I came up with some quick vegetable snacks. And who couldn’t use some more vegetable snacks, right?

POP THAT CORN

OK, if you know me, you know that popcorn used to be one of my binge foods.

Not that pop corn is bad for you but when I ate it in the amounts that I did –YIKES! My belly suffered.

So instead of popping those dry corn kernels why not try eating REAL CORN ON THE COB! The corn season is about to pop so it’s the perfect time.

Buy corn on the cob
Boil a pot of water with a touch of milk or soy milk and a pinch of salt
Once boiled turn down the heat and add the shucked corn
Let stand in the water for 10 minutes
Remove with tongs and eat

It's easy to carry if you want to bring it for a snack or store it in the fridge to just grab and eat.

Add butter, ghee, flax oil, a touch of salt or umeboshi paste to the corn on the cob.

SWEET AND SALTY GREENS

Do you know how many times I hear “greens take so long to make?”

I don’t buy it.
Greens are quick.
It’s just the mentality of cooking greens that needs altering.

In a saucepan add about 1-2 inches of water
Add soy sauce and mirin (a Japanese rice wine) to the water
Add kale or collards at the same time and bring the whole thing to a boil
Let simmer for 3-4 minutes or until greens are done
You can add more dressing if you like

I like it just the way it is because the soy sauce made it salty and the mirin made it sweet. Perfect combo when you can’t decide between sweet and salty.
